Buffalo!
As you may have gathered, from the name of our fictional town, (Buffalo Gulch), to our animals and our chuckwagon supper menu…WE LOVE BUFFALO (Bison). Our son even goes to West Texas A&M…home of the Buffaloes! We love everything about buffalo, and we could watch them for hours. Currently we have 2 buffalo on the property. “Rosebud” is the 2 year old, and “Little Bighorn” is the calf. For you History “Buffs”, you may note that they are named after battles between the American Indian coalition of Lakota, Cheyenne, and Arapahoe tribes, versus the US Cavalry in 1876. (the Indians won both of those battles!) These batltles were partially over control of one of the last great buffalo hunting grounds in North America.
We also plan to serve bison at our chuckwagon supper as often as we can. Bison is both delicious, and a fantastic choice for anyone who is health conscious. Bison has about 1/3 the fat of beef and is leaner than chicken or salmon, and has more protein while having fewer calories. It is high in Zinc, Selenium, Phosphorus, and Vitamin B12. It is also higher in iron and Vitamin B6 than equal amounts of beef, chicken or fish.
